Le Cordon Bleu's

The Anáhuac University Network celebrates the outstanding participation of its representative in the XI International Chefs Olympiad, a highly prestigious event in world gastronomy, held from February 2 through 8 in India , with venues in Goa, New Delhi and Calcutta.

This competition, which brings together 50 countries , is held by invitation only, allowing one university to represent each nation. On this occasion, Sabrina Di Constanzo Araujo , a 5th semester student of the Bachelor's Degree in Gastronomy , accompanied by her mentor, Chef Carlos Barrera Palacios , instructor at Le Cordon Bleu of the Universidad Anáhuac México, were the ambassadors of Mexico and the Anáhuac University Network in the competition.

A high-level challenge in international gastronomy

The competition was held in two phases:

  • First phase : Each country, grouped into blocks of 10, had to demonstrate basic culinary skills and prepare a vegan dish that reflected technique, creativity and presentation.
  • Elimination : The best participants advanced to the next round, divided into two categories:
  • Silver Final : Positions 11 to 20.
  • Gold Final : The top 10 of the competition.

The jury was made up of international chefs with extensive experience , who evaluated the performance of each competitor under the highest standards of global gastronomy.

Thanks to her talent and discipline, Sabrina Di Constanzo Araujo managed to advance to the Silver Final , consolidating herself among the top 20 competitors in the world. It is worth noting that Universidad Anáhuac was the only Latin American institution present at the competition , which represents a great pride and an invaluable opportunity to connect with other international schools and universities.

This was Le Cordon Bleu's third participation in the International Chefs' Olympiad, reaffirming its commitment to gastronomic excellence and the training of leaders who transcend the culinary field worldwide.

We congratulate Sabrina Di Constanzo Araujo and Chef Carlos Barrera Palacios for proudly and excellently representing Universidad Anáhuac and Mexico in this prestigious competition. May this be just the beginning of a great culinary career!
